Description

A reliable, bakery-style cookie featuring a perfect balance of crisp edges and a soft, chewy center. This foundational dough uses a high-temperature bake to create professional results with every batch.

Ingredients

  • 1 cup salted butter, softened but cool
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 2 cups (12 oz) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius) and line three large baking sheets with parchment paper or silicone mats.
  2. In a medium-sized bowl, whisk together the all-purpose flour, baking soda, baking powder, and sea salt until evenly combined.
  3. Using a stand mixer or hand mixer, cream together the softened salted butter, granulated sugar, and light brown sugar until the mixture is combined and slightly fluffy.
  4. Add the two large eggs and pure vanilla extract to the butter mixture and beat for one full minute until the batter looks light and pale.
  5. Turn the mixer to the lowest setting and slowly add the dry flour mixture, mixing only until the white streaks of flour just disappear.
  6. Using a sturdy spatula, fold in the two cups of chocolate chips by hand until they are distributed evenly throughout the dough.
  7. Roll the dough into balls (about 2 to 3 tablespoons each) and place them on the prepared baking sheets with space to spread.
  8. Bake for 8 to 10 minutes, removing them when the edges are just turning golden brown but the centers still look soft and doughy.
  9. Let the cookies sit on the baking pan for at least 5 minutes to set before moving them to a wire cooling rack.

Notes

To achieve a more uniform look, use a cookie scoop for even portions and press a few extra chocolate chips onto the tops of the dough balls right before baking. Always allow the cookies to rest on the hot baking sheet for several minutes to ensure they set properly without breaking.
